Paleo Spicy Chicken in the Slow Cooker

The slow cooker is great; however, at times the dish can come out dry and flavorless. Not this recipe; it is jam packed with spices. To make it even better it is Paleo!
Paleo Spicy Chicken in the Slow Cooker

Why I like this recipe:
  • Who doesn't love it when you can throw everything into a slow cooker, leave it, and come back to a delicious meals!
  • This is a flavorful dish that doesn't disappoint, while some slow cooker recipes leave the meal dry and underwhelming. 
  • You add a majority of the ingredients to a food processor, eliminating the need for hours of chopping. 
Paleo Spicy ChickenIngredients: 
  • 8 scallions
  • 3 Tbsp coconut oil
  • 1 habanero or serrano chile,  stemmed and seeded
  • 1 Tbsp ginger, peeled
  • 2 Tbsp raisins
  • 2 tsp dried thyme
  • 3 garlic cloves
  • 1 Tbsp allspice
  • 2 tsp kosher salt
  • 1/2 tsp pepper
  • 1 tsp coriander
  • 4 lb of chicken drumsticks or thighs
Add all the ingredients, except for the chicken, into the food processor and blend until smooth, approximately 30 seconds. Reserve 1/2 cup of the mixture, cover, and refrigerate. Take the remaining mixture and coat over the chicken in the slow cooker. Cook for 4 hours on low.

Place the chicken on a wire rimmed baking sheet and brush half the mixture over the chicken. Broil the chicken close to the burner for about 10 minutes, until the skin is crispy and charred. Brush the remaining mixture over the drumsticks and serve!
