Classic and Traditional Chicken Noodle Soup


Classic chicken noodle soup is my favorite thing when I am having a busy week. Just something warm, to calm me down from the hustle and bustle of life. When life is busy, however; I don't have the time to stand on my feet and stir a pot.

Why I like this recipe: 

  • No frills chicken noodle soup. It keeps the classic and traditional style, when you are just wanting good ole' chicken noodle soup. 
  • This is quick and easy, and better than store brand! 
  • Just need to make sure the egg yolk noodles are in my pantry, and I typically have all the ingredients already!  

Ingredients
  • 1 Tbsp butter or oil
  • 3 quarts of chicken broth - my homemade recipe makes enough
  • 1 onion
  • 3/4 cup celery
  • 3/4 cup carrots
  • 2 tsp garlic
  • 4 chicken breast
  • 8 oz of egg yolk noodles
  • 1 tsp oregano 
  • 1 tsp basil
  • salt and pepper to taste
In a large pot, add 1/2 tablespoon of your butter or oil and allow it to melt. Once the pan is hot add the chicken breast and brown each side, approximately 3 minutes each side. Remove the chicken from the pot, and add the remaining butter or oil. Add the onion and celery until it is tender, approximately 5 minutes. Once tender, add the garlic and allow to cook for 30 seconds.

Add the broth, chicken, carrots, noodles, and spics to the pot. Bring the mixture to a simmer, and continue for 20 minutes. Test the chicken to insure it is completely cooked, and if so remove from the soup and shred. Add the shredded chicken back to the soup and serve!
